A HUSBAND and wife team plan to set up a new brewery off Keighley's Dalton Lane.

Adrian and Emma Chapman, of Eastburn, are establishing Wishbone Brewery in Chesham Street. They hope to be up and running within four months.

Company owner and head brewer Mr Chapman said: "As soon as the lease is signed I will be placing orders for my equipment and getting the builders on site to sort out the drainage and flooring.

"I'm not new to brewing having spent the last five years working for Saltaire Brewery and currently hold the position of brewhouse team leader. Previously it was home-brewing that drove my ever increasing passion for flavour in beer.

"My wife Emma is used to me talking about beer and brewing and she will be doing sales and event management for Wishbone."

The new enterprise will be a 10-barrel brewery with four fermenting vessels in two sizes enabling the couple to brew up to four times per week.

Mr Chapman explained that this equates to 2,880 pints per brew or 40 pub-sized casks.

He added: "Most of the brew-kit is to be designed and built in Yorkshire, though my fermenting vessels will be built in and shipped from China.

"The aim is to produce beers born from my passion for flavour, attention to detail and the consistency learned at Saltaire. Some of my beers will be vegetarian and vegan-friendly.

"It's about helping people to expand their taste horizons, so my beer range will include the use of hops from around the world, speciality malts from across Europe, and different yeasts, fruit, herbs and spices.

"In the future I have plans for a brewery tap on site so beer lovers can come and sample brewery-fresh beers a stone's through from Keighley's other excellent pubs.

"We're hoping to play a part in the further regeneration of the Dalton Lane area, and want to expand in future to create more jobs in Keighley."
