Vanilla Ice Cream (enough to fill a one litre container)
Ingredients
395g can sweetened condensed milk
600ml pot of double cream
1 tsp vanilla extract
Method
1. Whisk the cream with an electric hand mixer in a large mixing bowl until it begins to thicken
2. Add the vanilla and continue to whisk until a light whipped cream forms
3. Gradually add the condensed milk and keep whisking until it thickens and comes to a nice, smooth creamy texture
4. Scoop the yummy mixture into a 2lb loaf tin or large freezer container, cover with cling film and freeze until hard and solid (you can also add all sorts of flavourings and toppings, depending on what you like)
Chocolate Ice Cream
1. Use the recipe above with two tablespoons of Fair Trade cocoa powder and then add anything chocolatey to the recipe at the end, like chocolate chips, flake chocolate bar or maybe crumble in a few chocolate cookies or brownies
2. For an extra strong chocolate flavour, why not stir in a few tablespoons of melted Nutella chocolate spread?
3. Also, it is worth trying out the caramel version, by adding a broken Snickers or Mars bar with a can of caramel condensed milk – this will keep the kids happy!
Other options
l After Eight mints broken into chocolate ice cream, or salted caramel ice cream drizzle version, which will have adults’ knees quivering
l Peanut butter and banana will even please Elvis himself
l Summer fruits are the perfect treat, topped with pistachio nuts
l Mocha latte coffee or rum and raisin for the trendy connoisseurs out there
