Ingredients

500 gms minced lamb/mutton

2 eggs

1 chopped onion

5 green chile (chopped)

100 gms chana soaked overnight

10 pods garlic

1 teaspoon cumin seed

4 cardamoms

A piece cinnamon

A piece ginger

Four red chilies

vegetable oil/any oil may be used

Method

• Boil minced meat with water and salt for around 5/10 minutes until the minced meat is very nice and tender

• Take the meat and place into a mixing bowl and stir and grind the meat until it's formed like a paste

• Add the garlic, cumin seeds, cinnamon, ginger, red chillies, cinnamon and soaked chana and mix them with the minced meat until all the ingredients have mixed well together.

• Add the chopped green chillies and onion to the rest of the mixture and mix well.

• Take some of the mixed dough and start to make ball-shaped kebabs as seen in the picture

• Once all the kebabs’ doughs have been made, take the two eggs and remove the yolk into a bowl. Mix the yolk well with a spoon

• Heat the pan with oil, and whilst the oil gets hot, dip your kebab in the egg yolk so it's covered with the yolk. Once dipped in the yolk slowly place the kebab into the frying pan and fry until golden brown.

This is the recipe for the all-time favourite, the Indian burger known as shami kebab.
