Salmon and Prawn Ravioli - Recipe
Here is how to make the sauce and the smoked salmon and prawn filling for our ravioli:
Ingredients - Serves 6
• 250gr diced smoked salmon
• 250gr fresh Atlantic prawns
• 75gr Soft Cream Cheese
• 2 Freshly Squeezed Lemons
• Handful of Chopped Parsley
• Handful of Chopped Chives
Method
• Very easy, put all the ingredients into a large mixing bowl and mix together until it has a nice ‘paste’ like consistency.
Our final stage is to make the sauce.
Ingredients
• 20 shelled king prawns
• 4 julienne cut courgettes (thinly sliced)
• 3 diced shallots
• 2 crushed garlic cloves
• 1 glass white wine
• Pinch saffron
Method
• Put a large saucepan of water on to boil for the ravioli, add a pinch of salt but don’t add the ravioli yet. The ravioli will take 2-3 minutes to cook so this needs to be done when the sauce is finished
• In a large frying pan add a splash of olive oil, the garlic, the shallots and the king prawns, and stir fry for about 5 minutes
• Add the courgettes and a pinch of salt and pepper and cook for a further 3 minutes
• Add the white wine and saffron and simmer until the sauce has reduced
• Now you can add your ravioli to the boiling saucepan of water. The cooking process for fresh pasta is very quick, an indicator is when the pasta rises to the surface of the water it’s usually cooked but it should take around 2-3 minutes
• Drain the ravioli and add to the sauce, add a knob of butter and stir gently so not to break the pasta
Now the very last stage, pour the wine into a glass, serve the pasta and enjoy, Buon Appetito!
