BUBBLE & SQUEAK
Serves 4 good-sized portions
Ingredients:
200g/7oz leftover turkey or any meat, shredded
250g/9oz leftover roast potatoes, mash, or you can make the weight up by adding in leftover roast parsnips or carrots if you like, or just make up some fresh mash potato if the leftovers have already been snaffled
100g/4oz leftover sprouts or cabbage, shredded
1 tablespoon cranberry sauce
1 egg, beaten
10g/knob of butter
Vegetable oil, good drizzle
Salt and black pepper, to taste
Method:
1. In a large bowl, mix the sprouts or cabbage with the turkey and mashed potatoes and other veg if using, add the egg and cranberry and season well with salt and black pepper and stir well to combine.
2. Dust a work surface and hands with a little flour, then shape the mix into 4 large patties or smaller ones if you wish.
3. Put a large frying pan over a medium heat with a drizzle of vegetable oil, followed by the butter.
4. As soon as the butter has melted, put the patties into the pan and fry for a few minutes, turn them over and cook for another few minutes until cooked through and golden all over.
5. Lift onto kitchen roll to drain then repeat the process until you have cooked them all.
6. You can add a poached or fried egg on top and serve with ham or pigs in blankets and a crisp salad.
