Recipe for Chocolate Fudge Brownie
Ingredients
170g/6oz dark Fairtrade chocolate, chopped
200g/7oz unsalted butter
450g/14oz light brown sugar, Fairtrade
2 teaspoons vanilla extract
3 eggs
250g/8oz plain flour
6 tablespoons cocoa powder, Fairtrade
100g/4oz dark or white chocolate chips, Fairtrade (optional)
Handful of crushed walnuts (optional)
Method
1. Preheat the oven to 180c/Gas Mark 4.
2. Melt the chocolate and butter in a small bowl over a pan of simmering water. Set aside to cool slightly.
3. Stir the brown sugar into the chocolate mixture, then gradually beat in the eggs and vanilla extract with a wooden spoon.
4. Sift over the flour and cocoa powder, and add the optional ingredients if you wish.
5. Stir until evenly blended. Do not over-mix.
6. Pour the mixture into a greased and lined 8-inch/20cm square tin or similar container.
7. Bake on the middle shelf for 30/35 minutes.
8. A skewer should come out with a few sticky crumbs indicating a softer middle.
9. Leave in the tin for five minutes, then transfer out onto a cooling rack to cool fully.
10. Once cool, cut up into squares with a light dusting of cocoa powder or a drizzle of melted chocolate.
